Grilled salmon, a dish from Argentina prepared by the Happy Chief Cook.

The salmon fillet is just done and very juicy.
If you don't like that, then you can grill it longer until the salmon has a crust.

The fresh coriander has the tendency to dominate and gives many people a soapy taste in the mouth, so don't use too much if you do not like coriander.

Serves: 2.
Preparation time: 45 minutes.


2 salmon fillets each 250 grams,
4 tablespoons olive oil
2 limes,
2 cloves garlic,
0.5 teaspoon ground coriander
2 tablespoons fresh parsley
0.5 tablespoon fresh coriander,
sea salt to taste
about 2 teaspoons black peppercorns (to taste).


Grind the black peppercorns in a mortar fine.

Cut the butt of the garlic clove and crush the garlic.
Remove the hard peel and chop the garlic finely.

Grate the zest of 1 lime, and then squeeze the lime.
Keep the second lime for garnish.

Chop the fresh parsley.

Chop the fresh coriander.

Rinse the salmon fillets off under gently running cold water and pat it dry with paper towels.
Place the salmon fillets in an oven dish.

Mix the olive oil, lime juice, the lemon zest, garlic, ground coriander, fresh coriander, parsley, salt and black pepper well together.

Brush the salmon with the marinade completely.
Cover the oven dish with plastic foil and let it marinate in the refrigerator for at least 30 minutes.


Preheat the grill to 240 degrees Celsius.

Bake the salmon fillets on the barbecue or under a hot grill until tender, 4 to 5 minutes on the flesh side and 5 to 6 minutes on the skin side.

Serve the grilled salmon fillets each with a wedge of lime, Rösti and a salad.
