Banana Bread, a recipe from Brazil prepared by the Happy Chief Cook.

You can make four small delicious banana loaves of this quantity.
The dish is fairly simple to prepare, but you do need a food processor to make it.

The banana sandwiches are very sweet and quite heavy.
The crust on top is crispy.

Don't throw away the empty scraped vanilla pod, but put it in a jar of fine granulated sugar.
Add in the course of time, more of these vanilla pods in the fine granulated sugar.
When you put a new empty vanilla pod in the fine granulated sugar, you have to shake the jar well.
You will get a delicious vanilla sugar, which you can use in many recipes.

Bananas are ripe when they start to get brown spots.

This is a vegetarian dish, but instead of vegetable butter I have used real butter.

Preparation time : 1 hour and 50 minutes.
Serves: 4.
Preparation technique: oven.


125 grams real butter or vegetable butter,
225 grams fine granulated sugar,
2 eggs,
3 ripe bananas,
2 tablespoons honey,
1 lemon,
1 vanilla pod,
225 grams self-raising flour,
1 teaspoon ground cinnamon,
100 grams almonds,
50 grams of raisins.


4 tins of 15 centimeters (6 inches),
rolling pin,
plastic bag,


Take the butter out of the refrigerator and let it come to room temperature.

Well the raisins in hot water for 20 minutes.

Grind the almonds in a food processor as fine as possible.

Cut the vanilla pod in half lengthwise and scrape the vanilla seeds from the pod.

Grate the yellow part of the skin of the lemon.
Then cut the lemon in half and squeeze the lemon.

Sieve the self-raising flour.


Preheat the oven to 180 degrees Celsius.

Grease 4 small form of 6 inch lightly with butter.

Put the butter and sugar in a bowl, and mix it using the mixer in the food processor until it has become a light and creamy dough.
Add the eggs and mix it well.

Peel the bananas and cut them into small pieces.

Put the bananas, honey, lemon juice, lemon zest and vanilla seeds in a blender and blend it until it has become smooth.

Add the banana mixture to the dough, and stir everything well using the mixer of the food processor.

Then slowly add the self-rising flour, ground cinnamon and almond flour.

Spoon the batter into the baking tins and let it bake 55 minutes in the middle of the oven until the bread is done.

Then turn the oven off, put the oven door partially open and let the banana bread rest for 5 minutes in the oven.
When the banana bread comes out of the oven, you can remove them from the baking tins.

Cut the banana bread than in slices and serve with a touch of butter, or place them under the grill and serve hot.


It is delicious with coffee.
