  1. English Stew
  2. Salmon with Cucumber Sauce

Salmon with cucumber sauce, a dish from England by the Happy Chief Cook.

Salmon with cucumber sauce served with mini potatoes and carrots.

A very juicy salmon steamed in butter and their own body fluid.
The preparation is quite simple.
Watch out, while eating, for the bones that are still in it.

Preparation time: 35 minutes.
Serves: 4.
Technique: oven and bake.

4 salmon fillets 3 cm thick (around 700 grams),
4-season pepper,
juice of half a lemon,
2 tablespoons real butter,
1 large cucumber,
125 ml dry white wine,
1 container sour cream (125 ml),
1 bunch dill.

Preheat oven to 175 degrees.

Grab a large piece of aluminum foil and grease it with 1 tablespoon butter.
Place the salmon steaks on, season with salt and 4-season pepper and sprinkle with lemon juice.
Fold the foil loosely over it and cook the salmon steaks 20-25 minutes in the middle of the oven.
Then let them cool off in the foil.

Peel the cucumber and cut it in half lengthwise.
Remove the seeds with a teaspoon and slice the halves into small cubes.

Chop the dill finely.

Melt the remaining butter in a pan and fry the cucumber 2 minutes.
Add the wine and let it simmer gently 10 minutes until the liquid has evaporated.
Stir from the heat through the sour cream and dill.
Make it to taste with salt and 4-season pepper.
Divide the salmon steaks on 4 warmed plates and spoon over each salmon slice some of the sauce.
