  1. Ntomo Krakra (Frikandels of Sweet Potato)



Ntomo Krakra (Frikandels of sweet potato), a recipe from Ghana prepared by the Happy Chief Cook.

Ntomo Krakra (frikandels of sweet potato) served with beef ragout.

Preparation time: 3 hours and 30 minutes.
Serves: 4.


2.2 lb sweet potato (1 kilogram),
1 tablespoon whole milk,
1 clove of garlic,
2 large sprigs of parsley,
2 eggs,
1 tablespoon flour,
10½ oz breadcrumbs (300 grams),
dairy butter,
Salt and pepper.


Peel the sweet potatoes and cut them into small pieces.

Boil the sweet potato for 15 minutes until done.

Chop the parsley and the garlic.

Puree the potatos in a food processor with the parsley, garlic and whole milk.
Mix 5 oz (150 grams) of breadcrumbs into the mixture.

Spoon the mixture into a pan, and simmer it over low heat (stirring constantly) so that the moisture can evaporate until the mass solidifies.

Leave it to cool.

Roll the puree into small, firm frikandels.

Sieve the flour, beat the eggs and mix in with the flour.
Add salt and pepper to taste.

Roll the frikandels first through the beaten egg mixture and then through the breadcrumbs.

Heat the butter and fry the frikandels until golden brown.

Serve hot.

Serving suggestion:

Sweet potato frikandels taste very good with fish- or meat ragouts.
