DutchRAS EL HANOUT (Moroccan Spice blend)

Ras El Hanout is a typical Moroccan blend of spices and it literally means "the best in the shop".
The mixture consists of at least 12 ingredients, but sometimes there are 50 in processed.
It is mainly used in Moroccan cuisine and is available in most Moroccan stores.
Which herbs are used and in what quantity is in the herbal stores a carefully guarded secret.
The mixing is regarded as an art.

Ras El Hanout is tasty with poultry, meat, game, rice and couscous.

If you actually wish to make it yourself is here a basic recipe.

Ras El Hanout (Herbal Blend) prepared by the Happy Chief Cook.

Preparation time: 5 minutes.
Quantity: about 50 grams.


Grinder (which is used only for grinding spices).


10 teaspoons black peppercorns,
8 teaspoons ginger powder,
8 teaspoons cumin seeds
5 teaspoons coriander seeds,
8 teaspoons ground cinnamon,
2 teaspoons grated nutmeg
2 teaspoons cardamom powder
2 teaspoons paprika,
2 teaspoons ground turmeric,
2 teaspoons salt
2 teaspoons ground allspice,
16 cloves.


Make everything fine in a mortar, and mix it well.
I've used a coffee grinder, and grind it for 15 seconds.


This blend has a wonderful fragrance.
