Coconut custard, a recipe from Vietnam prepared by the Happy Chief Cook.

In the picture above is the coconut custard just prepared.

A deliciously sweet coconut custard.
The dish is quite simple, but it is intensive work.

Preparation time: about 30 minutes + 2 hours to cool.
Serves: 4.
Preparation technique: a bain marie.


0.4 liters coconut cream,
4 large eggs,
100 grams of sugar.


Pour the coconut cream in a pan and let it simmer for 5 minutes.

Put the eggs in a bowl and beat the eggs.

Then whisk the sugar with the eggs until the sugar is completely dissolved.

Place the bowl in a large pan and pour boiling water into the pan to halfway the bowl.
Gradually whisk the hot coconut cream through.
Keep stirring until the mixture has thickened.

Once the mixture is bound remove the bowl from the boiling water and let it cool.
Stir every 5 minutes a little.

Put it in the fridge and let it cool.

The coconut custard can be eaten both hot or cold.
